Directions
For the pickled onions: In a mixing bowl using your hands, combine the onions, red wine vinegar, sugar and salt until fully combined. Refrigerate for 36 hours before using.
For the burgers: Preheat the oven to 425 degrees F.
Form the meat into 3-ounce patties, 3 1/2 inches in circumference. Refrigerate to get as cold as possible.
For the salsa verde: Toss the tomatillos in the olive oil and roast until the skins are blistered. Meanwhile, sauté the garlic and onion until translucent. In a blender or food processor, blend the tomatillos, garlic, onion, jalapeño sugar, salt and pepper until a salsa is achieved.
For the sweet n spicy bacon: Toss the bacon in the sweet chili sauce and cayenne pepper. Roast until the bacon is crispy and the sugars are caramelized.
For the nacho cheese crema: Combine the sour cream, Cheddar powder, chipotle puree, onion powder, paprika, garlic powder, cayenne, salt and pepper in a medium bowl. Whisk together until evenly combined.
For the kewl ranch seasoning: Combine the ranch powder, granulated onion, granulated garlic, paprika and cayenne in a bowl and mix by hand.
For the burgers: Preheat a deep-fryer to 350 degrees F.
Sprinkle the patties lightly with the seasoned flour, shaking off the excess, then coat fully in the egg, then transfer to a bowl of crushed tortilla chips and coat fully. Fry the patties until cooked to desired doneness. Season the cooked patties heavily with the kewl ranch seasoning.
Assemble the burgers by placing the patties on the toasted brioche buns, then adding the salsa verde, sweet n spicy bacon, nacho cheese crema, pickled onions, oregano and crushed red pepper.
After questioning your own sanity for taking this long to make a hamburger, take a bite, and give yourself a big pat on the back!
