Juicy shrimp, sweet corn, red bell pepper and tender zucchini are tossed with store-bought Cajun seasoning for a smoky, slightly spicy kick, then cooked together in the air fryer until perfectly crisp-tender and finished with a squeeze of lemon and a drizzle of garlic butter. It's a quick, one-basket meal that's fresh, satisfying and perfect for busy weeknights when you want something hearty but quick to clean up.

Special equipment:
a 6-quart air fryer
Combine the corn, bell pepper and zucchini in a large bowl. Add 2 tablespoons of the melted butter and 1 1/2 teaspoons of the Cajun seasoning and toss to coat.
Spread out the vegetables in the air fryer basket and cook at 400 degrees F until tender and lightly charred, about 10 minutes (see Cook’s Note).
Meanwhile, add the shrimp, 2 more tablespoons of the melted butter and the remaining 1 3/4 teaspoons of Cajun seasoning to the same large bowl and toss to coat.
Spread the shrimp on top of the vegetables and air fry, turning the shrimp halfway through, until cooked through, 5 to 6 minutes more.
Meanwhile, stir together the garlic and remaining 2 tablespoons melted butter in a small bowl. Squeeze the juice of 1/2 lemon over the shrimp and vegetables in the basket and pour over the garlic butter; toss to coat. Taste and adjust the seasoning with salt and pepper if needed.
Transfer to a platter and sprinkle with chopped parsley. Cut the remaining lemon half into wedges and serve on the side.
