Blueberry-Maple Waffle Sundaes

  1. Simmer 1 cup blueberries, 1/2 cup maple syrup, 1/4 teaspoon vanilla and some lemon zest in a saucepan until slightly thickened. Toast whole-wheat waffles and top with scoops of butter-pecan ice cream. Drizzle with the blueberry sauce.
