This vegetarian take on a Buffalo chicken sandwich uses thick slices of eggplant, quickly battered, pan-fried, and dunked in buttery Buffalo sauce. Serve on a soft sesame seed bun with crunchy carrots, celery and blue cheese dressing.

Directions
Whisk together the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Slowly whisk in 1/2 cup ice water until the batter is smooth; set aside.
Microwave the Buffalo sauce and butter in a large microwave-safe bowl until the butter melts and the sauce is hot, 1 to 2 minutes. Stir to combine. Season the eggplant slices on both sides with salt and pepper.
Heat 1/2 inch vegetable oil in a large skillet over medium-high heat until a deep-fry thermometer registers 350 degrees F. Dip the eggplant rounds in the batter to coat, then carefully add to the hot oil and cook until golden brown, 3 to 4 minutes per side. Remove to a paper towel–lined plate to drain.
Dip the eggplant in the Buffalo sauce mixture, then place each piece on a bun bottom. Spread 1 tablespoon blue cheese dressing on each bun top. Top the eggplant with lettuce, pickles, red onion and the bun top. Serve with carrot and celery sticks and more blue cheese dressing.
