This rice side dish is bright green from a blend of coconut milk, cilantro and jalapeño. It is cooked with both the coconut milk and water to ensure that it cooks evenly and results in a fluffy, highly aromatic rice.

Directions
Puree 2 cups fresh cilantro, 1 small jalapeño, 1 cup unsweetened coconut milk and 1 teaspoon kosher salt in a blender. Cook 2 sliced scallions in 2 tablespoons butter in a saucepan until tender. Add 1 1/2 cups jasmine rice, the cilantro mixture and 1 1/4 cups water. Bring to a simmer, stirring; cover and cook over low heat until tender, 17 minutes. Set aside, covered, 10 minutes.
