These elegant treats are surprisingly simple to make: a pistachio cream and crispy kataifi filling is shaped into bite-sized rounds, then coated in smooth melted chocolate and sprinkled with crunchy pistachios. Each indulgent bite delivers the perfect balance of sweet, salty, buttery and nutty.

Directions
Line a 9-by-13-inch baking dish with parchment and set aside (see Cook’s Note).
Melt the butter in a large nonstick skillet over medium heat. Add the kataifi and salt and cook, stirring constantly, until evenly golden brown and crunchy, about 10 minutes. Transfer the kataifi to a medium bowl and stir in the pistachio cream until evenly combined.
Scoop 1-tablespoon portions of the kataifi mixture and shape into small balls. Transfer to the prepared baking sheet, leaving a small space between each ball. Refrigerate uncovered until completely cold and solid, about 1 hour.
Microwave the chocolate and coconut oil in a medium microwave-safe bowl in 30-second increments, stirring between each, until melted and smooth, about 90 seconds.
One at a time, dip the balls into the chocolate using the tines of a fork, gently shaking off excess. Transfer back to the baking sheet and sprinkle with the pistachios before the chocolate sets. You may not use all of the chocolate. Refrigerate the truffles until the chocolate is set, about 30 minutes.
Cook’s Note
If a 9-by-13-inch dish won’t fit in your refrigerator, you can also use multiple plates to hold the truffles.
