Grilled Pork Chops with Rhubarb Chutney and Foil-Packet Potatoes

A sweet, sour and tangy chutney is the perfect condiment for simple grilled pork chops. Rhubarb is quickly cooked with orange juice, apricot preserves, fresh ginger, cider vinegar and fennel seed until softened. Served alongside the juicy pork chops and one of our favorite grilling hacks, foil-pack potatoes. Baby potatoes “roast” in foil on the grill until charred and tender, which means no turning on the oven and very little cleanup.

Directions
Preheat a grill to medium-high. Combine the potatoes, olive oil, 1/2 teaspoon salt and a few grinds of pepper on a large sheet of heavy-duty foil. Spread in an even layer, then bring the ends of the foil together and fold to seal; crimp the open edges. Grill, flipping once, until the potatoes are browned and tender, 20 to 25 minutes. Set aside in the packet to keep warm.
Meanwhile, combine the preserves, orange juice, vinegar, ginger, 1/2 teaspoon fennel seeds, 1/4 teaspoon salt and a few grinds of pepper in a medium saucepan. Bring to a simmer over medium heat, add the rhubarb and cook, stirring occasionally and adjusting the heat to maintain a simmer, until the rhubarb is softened, 5 to 7 minutes. Remove from the heat.
Season the pork chops with salt and pepper. Stir together the paprika and the remaining 2 teaspoons fennel seeds; rub all over the pork. Oil the grill grates, then add the pork and grill, turning once, until it’s marked on both sides and just cooked through, 5 to 6 minutes total.
Toss the potatoes with the parsley. Serve with the pork chops and rhubarb chutney.
