Grilled Ranch Pizza with Bacon and Broccolini

It’s no secret that we are big fans of ranch dressing here in the test kitchen at Food Network, and we love to use it unique ways. More than just a condiment or topping for salad greens, we love to cook with it. Ranch dressing is the perfect topping for pizza, replacing tomato-based pizza sauce and paired with smoky bacon and fresh broccolini.

  1. Preheat a grill to between medium-low and medium heat. Oil the grates. Toss the broccolini with 1 tablespoon olive oil. Place the broccolini and bacon on the grill. Cook, flipping occasionally, until the broccolini is slightly charred and crisp-tender and the bacon is crisp, about 6 minutes. Transfer the broccolini and bacon to a cutting board and roughly chop both.
  2. Increase the grill heat to medium-high. Dust the pizza dough with flour. Roll out on a floured piece of parchment paper into a rustic 10-by-14-inch oval or rectangle (about 1/8 inch thick). Rub the dough with the remaining 1 tablespoon olive oil. Lift the parchment and flip the dough onto the grill; immediately remove the parchment. Grill, rotating the dough halfway through if needed, until slightly puffed on top and marked on the bottom, 3 to 5 minutes. Remove the crust using tongs and flip onto a cutting board, cooked-side up.
  3. Brush the crust with ranch dressing and top with the red onion, thyme, mozzarella, broccolini, bacon and provolone. Slide the pizza back onto the grill. Cover and cook, rotating the pizza as needed, until the crust is marked and the cheese melts, 3 to 5 minutes. Cut into pieces.
