Directions
Preheat a grill to medium-high. Put the couscous in a medium bowl and add the raisins, pistachios and 1/2 teaspoon salt. Bring 1 cup water, 2 tablespoons olive oil and the saffron to a boil in a small saucepan, then pour over the couscous and stir. Cover with plastic wrap or an airtight lid and let stand, covered, 5 minutes. Fluff with a fork. Taste and season with salt, if needed.
Meanwhile, combine the scallops, zucchini, eggplant, the remaining 4 tablespoons olive oil and 1 teaspoon coriander in a large bowl; season with salt and pepper and toss to coat. Stir together the yogurt, lemon juice, the remaining 1/2 teaspoon coriander and a pinch of salt in a small bowl.
Arrange the vegetables and scallops on the grill and cook, turning as needed, until charred at the edges and cooked through, about 5 minutes. Remove to a platter.
Divide the couscous, scallops and vegetables among plates. Serve with the yogurt sauce and lemon wedges.
