Healthy Sweet Potato Pie Smoothie

Incredibly versatile sweet potatoes combine with nutty almond milk, fresh ginger and cinnamon in this wholesome smoothie, bringing to mind the flavors of a festive sweet potato or pumpkin pie.

  1. Prick the sweet potato all over with a fork. Microwave whole, flipping halfway through, until very soft, 8 to 10 minutes. When fully cooled, scoop 1/2 cup of the flesh into a blender. (Save any remaining sweet potato for another smoothie.)
  2. Add the almond milk, flaxseed, cinnamon, salt, banana slices, date, ginger and a heaping 1/2 cup of ice to the blender and blend until very smooth.
