These colorful, salty-sweet bars are packed with loads of store-bought kosher for Passover sweets and treats, from coconut macaroons and fruit slice jelly candies to halvah and gluten-free pretzels. They’re pareve so they can be served as a fun addition to the holiday table and are also a great way to use up leftovers. When selecting the ingredients for the bars, just be sure to look for brands that are kosher for Passover.
Line a 9-inch square pan with aluminum foil, leaving a 2-inch overhang on each side. Set aside.
Combine the chocolate and oil in a medium microwave-safe bowl. Microwave on high, stirring occasionally with a rubber spatula, until melted and smooth, 1 to 1 1/2 minutes.
Put the cereal in a large bowl. Reserve a few pieces of the macaroons, fruit slice jelly candies, halvah, marshmallows, matzo, pretzels and walnuts for garnish, then add the remainder to the cereal bowl and toss to combine. Pour over the melted chocolate and toss to coat. Transfer to the prepared pan and press with the spatula to make an even, compact layer. Top evenly with the reserved ingredients. Refrigerate until firm and set, at least 2 hours and up to overnight.
Transfer the bar to a cutting board. Dip your knife blade in hot water first for a few seconds, wipe it dry and then use the warm blade to neatly cut it into squares, reheating the knife as needed.

Most bittersweet chocolate is dairy-free, but if you are serving these along with a meat-based meal, check your chocolate label to confirm.
