Gougères are a traditional French hors d’oeuvre made from a choux pastry mixed with cheese, typically Gruyère. This twist uses flavors of pimento cheese. Cheddar is used in place of Gruyère, along with chopped pimentos, cayenne and paprika for a little kick. A perfect party or cocktail snack that’s both elegant and fun.

Directions
Combine the water, milk, butter, 1/2 teaspoon salt, the paprika, cayenne and onion powder in a medium saucepan. Cook over medium heat until the butter is melted and the mixture is shimmering, about 2 minutes. Stir in the flour and chopped pimento with a wooden spoon to form a dough, 2 to 3 minutes.
Transfer the dough to a bowl. Using a mixer on medium-high speed, beat in the eggs one at a time. Beat in the cheese. Let the dough cool slightly.
Meanwhile, preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Scoop the dough into a piping bag fitted with a large tip. Pipe 1-inch mounds of dough (24 to 30), about 1 1/2 inches apart, onto the baking sheet.
Bake until the gougères are browned and puffed, 25 to 30 minutes. Serve warm.
