In 1949, Runza Restaurant in Lincoln, NE, started selling meat- and-cabbage-filled pastries, a mash-up of Old World foods brought over by Volga German immigrants. Runzas quickly became the unofficial food of Nebraska, and the chain now has about 85 locations in the state. This casserole is the big-batch version.

  1. Preheat the oven to 375 degrees F and coat a 9-by-13-inch baking dish with cooking spray. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the onion and cook, stirring, until softened, about 5 minutes. Add the beef, 1 teaspoon each salt and pepper and the garlic powder and cook, breaking up the meat with a wooden spoon, until no longer pink, 4 to 5 minutes. Stir in the Worcestershire sauce and cook 1 to 2 more minutes. Add the cabbage and a pinch of salt. Stir to combine, then cover, reduce the heat to medium and cook, stirring occasionally, until the cabbage is softened but not browned, about 5 minutes. Remove from the heat and set aside to cool slightly.
  2. Open 1 tube of crescent roll dough and unroll it in the baking dish so it covers the bottom. Spread the beef mixture evenly over the dough and sprinkle the cheeses on top. Open the second tube of dough and unroll it over the top of the filling.
  3. Bake the casserole until the dough is golden brown, the filling is hot and the cheese is melted, 25 to 30 minutes. Let cool about 10 minutes before serving.
