This decadent starter is an example of less is more. We cut strip steaks into logs, then quickly pan roast until medium rare and finish with a basting of butter, garlic and thyme. After a quick rest, the steak is cut into cubes, put on small skewers and finished with a sprinkling of truffle salt.

Ingredients

Directions

  1. Cut the steaks in half lengthwise and season with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the steaks and cook, turning, until browned, 1 1/2 to 2 minutes per side. While cooking the last side, add the butter, thyme and smashed garlic cloves to the pan; once the butter melts, use it to baste the steaks. Remove the steaks to a cutting board and let rest 5 minutes.
  3. Cut the steaks crosswise into 3/4-inch-thick pieces, sprinkle with truffle salt and serve on skewers.
