Strawberry Delight is a vintage, no-bake dessert with a texture that walks the line between a cheesecake and a trifle. The dessert is made by layering a graham cracker crust with sliced strawberries, sweetened cream cheese filling, strawberry-infused cream cheese, whipped topping and sliced strawberry topping, and is served chilled. Some versions also incorporate a layer of strawberry gelatin, but our version utilizes strawberry gelatin powder to infuse the cream cheese filling with strawberry flavor and give it a vibrant pink hue.

How to Make Strawberry Delight Like a Pro

Use fresh strawberries. In-season berries offer the best flavor, and their size is ideal for slicing and layering.

Make a coarse graham cracker crust for the best texture. Rolling the graham crackers to a coarse crumb consistency ensures that the crust remains just porous enough to absorb some of the strawberry juices as the dessert chills. “That means instead of separating into distinct layers, the crust gently melds with the fruit and cream, becoming more cohesive with every bite,” says Kim Klatzkin, a recipe developer at Food Network Kitchen.

Freeze your crust. Putting your graham-cracker-lined dish in the freezer helps the crust to bind together and firm up.

Add strawberry jam for extra flavor and function. Though not traditional, we add a few spoonfuls of strawberry jam throughout. “It deepens the strawberry presence (especially handy if your berries aren't peak-season sweet) and helps anchor the sliced strawberries to the crust like a flavorful glue.” Reach for seedless strawberry jam so that you avoid adding an extra liquid that might make the topping thin or watery.

Stir the jam to ensure optimal incorporation. Stirring the jam before using it loosens the texture, so it folds more seamlessly into the filling, Klatzkin says.

Bring your cream cheese to room temperature for the best texture. Ensuring that your cream cheese reaches room temp before stirring will ensure a smooth, fluffy texture.

Pull in strawberry-flavored gelatin to enhance flavor, form and color. Strawberry gelatin does triple duty in this recipe, imparting an extra layer of strawberry flavor, thickening the cream cheese topping mixture and creating a vibrant pink hue.

Reach for Cool Whip. Our whipped topping of choice is Cool Whip because it’s ultra-stable and holds its shape beautifully even after hours in the fridge.

Wipe down your dish and knife with a damp paper towel. To ensure clean, distinct layers for an eye-catching presentation, Klatzkin recommends wiping down the sides of the dish with a damp paper towel after spreading each layer. Then, when you’re ready to serve, wipe your knife down in between cutting each slice.

Can you make strawberry delight with frozen strawberries?

Skip the frozen strawberries; fresh strawberries are best for making strawberry delight, as their crisp, plump bite is an important textural element in the dish. There are so few ingredients that each one counts and contributes important qualities to bring the dish together.

Can you use homemade whipped cream?

Although you can use homemade whipped cream sweetened with sugar, it won’t hold quite as well over time as compared to Cool Whip, our whipped topping of choice for this recipe.

Can you make strawberry delight ahead of time?

Yes, strawberry delight can and should be made ahead of time! Strawberry delight needs time to set, so it needs to chill for at least four hours in the fridge. “This is a great dessert to make the night before — just don’t go too far beyond 24 hours ahead, as the strawberries will start to release extra moisture and affect the texture of the layers.” Klatzkin says.

What’s the difference between strawberry delight and strawberry pretzel salad?

While both desserts are strawberry-forward, they differ in crust and topping. Strawberry delight is made with a sweet graham cracker crust while strawberry pretzel calls for a salty, crunchy pretzel base. Strawberry pretzel salad features a firm gelatin top layer, and some strawberry delight recipes do too, but our version is finished with a soft, fluffy layer of strawberry-gelatin infused cream cheese and whipped topping.

Unlike its cousin, the beloved strawberry pretzel salad, this version skips the salty crunch of the pretzel crust for sweeter graham crackers and the firm gelatin top layer in favor of something softer, fluffier and a bit more unified in texture. This is a great dessert to make the night before — just don’t go too far beyond 24 hours ahead, as the strawberries will start to release extra moisture and affect the texture of the layers. Serve it chilled, topped with fresh berries and a sprinkle of graham cracker crumbs for a nostalgic, no-fuss finish.

  1. For the crust: Place the graham crackers in a resealable plastic bag and use a rolling pin or the back of a pan to crush into coarse crumbs. Transfer to a medium bowl and add the brown sugar and salt, using your fingers or a fork to fully incorporate the sugar into the crumbs. Drizzle in the melted butter and stir until the crumbs are entirely coated.
  2. Press the crumb mixture firmly into the bottom of an 8-inch square baking dish, using the bottom of a measuring up to help make it even. Freeze until firm, about 20 minutes.
  3. For the filling and topping: Spread 2 tablespoons of the strawberry jam over the crust, then arrange the strawberries on top in a single layer.
  4. Add the cream cheese, confectioners' sugar, vanilla and salt to a stand mixer fitted with a paddle attachment. Beat on medium high until completely smooth, 2 to 3 minutes. Transfer to a large bowl and fold in 12 ounces (1 1/2 containers) of the whipped topping until well combined. It’s okay if the mixture looks a bit lumpy at this point. Spread half of the cream cheese mixture over the strawberries and smooth the top with an offset spatula (see Cook’s Note).
  5. Add the strawberry gelatin and remaining 3 tablespoons strawberry jam to the other half of the cream cheese mixture and stir to thoroughly combine. Spread the strawberry mixture evenly over the first layer. Spread the remaining whipped topping over the strawberry layer and use the back of a spoon to create lines or swirls. Cover loosely and chill for at least 4 hours and up to 24 hours.
  6. Just before serving, top with additional sliced strawberries and a sprinkle of graham cracker crumbs. Cut into squares, wiping the knife before each slice, and serve cold.
