White Chili with Tofu and Hominy

Inspired by the flavors of white chicken chili, this vegetarian version is loaded with sweet parsnips, hominy, smoky spices and the mild heat of poblano peppers and tangy green chilies. Crispy spiced tofu adds a bit of meatiness and extra protein. Finish with a dollop of sour cream and diced avocado for a hearty and healthful weeknight-friendly chili.

  1. Heat 4 tablespoons vegetable oil in a large wide pot or Dutch oven over medium-high heat. Add the onion, poblanos and parsnips, season with salt and cook, stirring occasionally, until tender, 3 to 5 minutes. Add the garlic and cook, stirring, until softened, about 30 seconds. Add 2 teaspoons each cumin and chile powder, stirring to coat.
  2. Add the vegetable broth, 1/2 cup water, the hominy, green chiles and 1/2 teaspoon salt. Bring to a boil, reduce to a gentle simmer and cook until the mixture is slightly thickened and the vegetables are tender, 10 to 12 minutes.
  3. Meanwhile, season the tofu with the remaining 1/2 teaspoon each cumin and chile powder and 1/2 teaspoon salt. Heat the remaining 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the tofu and cook, tossing occasionally, until browned and crisp, 5 to 7 minutes. Remove to paper towels and season with salt.
  4. Taste the chili and adjust the seasoning. Thin with a few tablespoons of water, if needed. Divide among bowls and top with the tofu, sour cream, cilantro, avocado and onion.
