This easy side dish is truly a one-pan wonder. Just stir the ingredients together in a baking dish and let the oven do all the cooking. Add in some cheese towards the end to add richness and to bring all the flavors together. Try serving this with grilled chicken or shrimp for a protein-rich meal.

Directions
Stir together 1 1/2 cups boiling water, 1 cup quinoa, one 15.5-ounce can hominy (drained), 1/2 cup tomatillo salsa, 1 teaspoon kosher salt and 1/2 teaspoon ground cumin in an 8-inch square baking dish. Cover and bake at 375 degrees F until the liquid is absorbed, 30 minutes. Stir in 1 cup shredded pepper Jack and 1 tablespoon olive oil. Top with 1/2 cup more cheese. Bake at 425 degrees F, uncovered, until browned, 15 minutes. Top with sliced scallions.
