This crispy seaweed roll is inspired by one of Korea’s most iconic street foods. It’s simple, nostalgic and wildly satisfying. This version from my book Hand Taste: Cook Like a Korean Grandmother keeps things easy and fun with a filling of shredded hashbrowns — think French fries taken to the next level. The potatoes get wrapped in nutty sheets of nori, dipped in a light batter and twice-fried until shatteringly crisp. That double fry is the secret: golden on the first pass, then extra crunchy and irresistible on the second. The contrast is everything — ultra-crispy exterior, tender potato inside and that savory, umami kick from the seaweed. It’s salty, snacky and perfect straight from the rack while it’s still hot. Simple ingredients, big crunch, serious street food energy.

  1. Take one piece of nori. Place about 1 tablespoon defrosted hashbrown on the bottom two-thirds of the nori. Roll the nori and place seam down on a tray or plate. Repeat with the rest of the nori rectangles.
  2. Pour 2 inches of oil into a large heavy saucepan and heat until it registers 350 degrees F on a deep-fry thermometer. Set a wire rack over a sheet pan for draining.
  3. In a medium bowl, mix together the frying mix and 1 cup of water. Working in batches to avoid crowding the pan, dip the seaweed rolls into the batter and place in the oil. Fry until golden brown, 2 to 3 minutes. Drain on the rack.
  4. Once all the seaweed rolls have been fried once, working in batches, quickly fry a second time for just about 30 to 45 seconds. This will make the seaweed rolls extra crispy. Place back on the wire rack to drain and then enjoy!

Korean frying mix is a seasoned blend of wheat flour, cornstarch, rice flour and baking powder designed to create a light, crispy texture for fried foods. Look for it in stores specializing in Korean or Asian ingredients or online.
