Sweet and Sour Pork

No Chinese American meal is complete without some deep-fried golden nuggets of sweet meat, and this is a super tasty inspired version that may have you never ordering take out again.

  1. Heat 8 cups of the peanut oil in a large, heavy-bottomed pot to 375 degrees F.
  2. Mix the pork pieces with the soy sauce and garlic salt in a medium bowl. Let it sit and marinate while you prepare your batter and sauce.
  3. In a small saucepan, add the pineapple juice, ketchup, vinegar, brown sugar, chile flakes and 2 teaspoons of the cornstarch and whisk until smooth. Bring to a boil, then reduce to a light simmer for about 5 minutes. Set aside.
  4. To make the batter, mix together the flour, baking powder, baking soda and remaining 1 cup cornstarch. Season with salt and pepper. Add the soda water and remaining 3 tablespoons peanut oil and gently whisk until smooth. It should reach a pancake batter-like consistency. Adjust if necessary with a little more soda water until it reaches the right consistency.
  5. Submerge the marinated pork into the batter. Using a spider or slotted spoon, remove the pork from the batter, letting any excess drip off. Using a fork and one at a time, gently add the pork to the hot oil. Fry, in small batches, for about 3 minutes or until golden brown. Let it drain on a paper-towel-lined plate and then transfer immediately to a sheet pan lined with a wire rack. Make sure the oil comes back up to 375 degrees F and then repeat with the remaining pork.
  6. Add the peppers to the oil and lightly fry for about 1 minute. Next, repeat with the scallion pieces for about 2 minutes. Set aside to drain on the towel-lined plate.
  7. Add the fried pork and vegetables to a large bowl. Spoon on the warm sauce and toss to combine. Pour out onto a large platter of jasmine rice and douse in toasted sesame seeds and thinly sliced scallion greens.
