Directions
Make the onion jam: Cook the bacon and onions in a large skillet over medium-high heat, stirring occasionally, until the bacon fat is rendered, about 8 minutes. Reduce the heat to low, add the butter and garlic and cook until the onions and garlic are soft, about 10 more minutes. Stir in the vinegar and sugar and cook until thickened, about 3 minutes. Season with salt and pepper.
Make the burgers: Preheat a grill to medium-high. Form the beef into four 3/4-inch-thick oval patties, about 1/2 pound each. Season the patties generously with salt and pepper. Grill until desired doneness, 3 1/2 to 4 minutes per side for medium-rare; remove from the grill and let rest.
Toast the rolls only on the cut sides until light brown. Smear about 2 tablespoons of mayonnaise on the cut sides of each roll. Place the cooked patties on the bottom rolls, then top each with 2 pieces of bacon. Top each with 1 ounce cheese, 3 tablespoons onion jam and some butter lettuce, followed by the top buns.
