Mushroom Muffuletta on Plain Bagel

Directions

  1. For the bagels: Mix together the flour, cold water, salt and instant yeast in a mixer at medium speed until combined, 2 to 3 minutes. Divide into six 120-gram portions, then shape and roll each into a bagel. Let proof in the fridge on a baking sheet overnight.
  2. Preheat the oven to 450 degrees F.
  3. Bring water mixed with the barley syrup to a boil and drop in bagels 2 at a time; let simmer for 1 to 2 minutes, flipping them over halfway through. Use a strainer to remove the bagels. Place on a baking sheet. Repeat with the remaining bagels. Bake the bagels, rotating halfway through, until golden brown, about 14 minutes. Let cool completely before cutting.
  4. For the olive relish: Chop the black olives, artichoke hearts, Kalamata olives, Manzanilla olives, pepperoncini, red peppers, red onions and roasted garlic. Blend in a food processor, adding the olive oil, lemon juice, hot sauce, pepper and salt until it’s roughly chopped.
  5. For the shiitake bacon: Preheat the oven to 350 degrees F.
  6. Slice the shiitake mushroom caps. Evenly coat the shiitakes with the olive oil, salt and pepper. Roast on a sheet tray for 20 minutes. Rotate the sheet tray, then roast for another 15 minutes. While still hot, place in a bowl and add the liquid smoke. Place back in the oven for 5-minute intervals, checking regularly, until the shiitakes are crispy.
  7. For the cremini mushrooms: Preheat the oven to 425 degrees F.
  8. Wash and drain the sliced mushrooms. Combine the mushrooms with the wine, oil, thyme, salt and pepper. Spread the mushrooms on sheet pans. Place in the oven and roast 15 minutes, then rotate the sheet pans and roast until the liquid has cooked off, about 15 minutes more.
  9. For the 3-olive cream cheese: Mix the cream cheese with the feta and 1/3 cup olive relish.
  10. Assemble the bagel: Split a bagel and add some 3-olive cream cheese to both halves. Add about 1 tablespoon olive relish as well as some shiitake mushrooms and cremini mushrooms on each half. Add a handful of arugula and finish with the Swiss cheese. Put in a toaster oven until melted and slightly browning, 3 to 4 minutes. Serve open-faced.
