Directions
For the char siu pork belly: Lightly sear the pork belly on both sides until browned. In a separate pot, combine the soy sauce, mirin, garlic puree and ginger puree and bring to a light boil. Add the pork to the sauce, then cover and simmer until tender, about 3 hours. Remove the pork and let it rest.
For the cilantro mayo: In a blender, combine the cilantro, olive oil and garlic until smooth. Mix into the mayo until well combined.
For the pineapple salsa: Chop the habanero, onion, pineapple and cilantro into salsa-sized pieces. Mix in a bowl with some lime juice.
Stack 2 mini corn tortillas. Add Cheddar in the center. Warm on a pan or grill until the cheese melts, flipping occasionally so it doesn’t burn. Spread the cilantro mayo on the tortillas. Add the chopped char siu pork belly. Top with the pineapple salsa. Add cilantro. Sprinkle crushed dried instant ramen noodles on top. Garnish with a lime wedge. Done.
