What’s so great about this cookie is it requires no fresh ingredients, so it’s perfect for satisfying a sudden, unplanned sweet craving. I always have these ingredients on hand in my pantry, and I have a strong feeling after you make these once, you will be sure to always have them, too!

Directions
Preheat the oven to 375 degrees F.
In a small bowl, mix the flaxseeds with 5 tablespoons water to make a flax “egg”; set aside. In a large bowl, mix together the flour, sugar, chocolate, peanut butter, coconut oil, vanilla, baking soda and salt. Add the flax “egg,” which will now have a thicker consistency, and stir to combine.
Using your hands, roll the dough into golf ball–size balls and lay them out on a baking sheet. Make sure you give them space — they expand as they bake. Flatten each ball of dough slightly with your hands to about 1 inch thick. Bake for 10 to 12 minutes, then remove from the oven and let cool for 5 minutes. Trust me, do try and wait; if you remove the cookies from the pan too early, they will likely crumble.
Cook’s Note
I usually don’t bake all my cookie dough at once. Store unbaked cookie dough balls in an airtight container in the refrigerator for up to a week and bake a few more when the next craving strikes!
