Here’s the technique for classic cheesecake: Bake, preferably in a water bath, to prevent a cracked top. Then cool, oven open. Then chill, for hours and hours — and hope that it all comes out okay. When it works, it’s wonderful, but it’s not always what we want to sign up for. Enter the no-bake cheesecake, when you get that craveable creamy tang with a fraction of the work (and if the heat is on, it’s fab to leave the oven off). Here are so many ways to go, whether you’re craving a dessert that's fruity, chocolatey or something else. Just assemble and let your fridge do all the work until it’s ready to eat.
