  1. For the kimchi: Prepare your homemade kimchi 2 to 4 weeks ahead of the meal to allow for fermenting. Wash the cabbage and remove any damaged outer leaves. Cut the cabbage through the core into quarters. Lay a flat side of the cabbage down on a cutting board. Cut the cabbage into 1/2- to 1-inch pieces. Place in a mixing bowl and sprinkle with sea salt. Continue with the remaining cabbage. Massage the cabbage with clean or gloved hands. Add the carrot, daikon radish, green onion, ginger, garlic, Korean red pepper and fish sauce, if using, and place in a fermenting vessel. Press the mixture down firmly and cover with additional brine if necessary. (Make brine by combining 2 tablespoons sea salt per every quart fresh water.)
  2. Keep the vessel in a cool place with a tray or bowl under the vessel to capture any brine that bubbles over. Check and burp the vessel every couple of days if necessary (open and reclose the lid). After 2 to 3 weeks, taste periodically for crunch and sourness. Once you have achieved the desired flavor, transfer to the refrigerator. Enjoy and happy fermenting.
  3. For the pork burger: Combine the ground pork with the salt and pepper and portion into 4-ounce patties. Grill the patties for 5 to 6 minutes per side. Grill or toast your favorite potato buns, then layer the burgers with the Gouda and homemade kimchi.
