Directions
Heat a heavy bottomed saucepan over medium-high heat with the olive oil. Add the chorizo and cook until crispy, 5 to 7 minutes, then remove it from the pan with a slotted spoon to a paper towel lined sheet tray and set aside.
Add the onion to the same pan and sauté until translucent, about 5 minutes. Add the garlic and sauté for another minute. Add the potatoes, vegetable stock, thyme leaves and bay leaf. Cover the pan and bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes or until the potatoes are fork-tender. Season to taste. Add the heavy cream, then cover and cook for another 5 minutes. Add the kale and stir through. Cook for 2 to 3 more minutes, allowing the kale to become tender. Add the lemon zest and juice and adjust the seasoning to taste.
To serve, ladle the soup into a bowl and garnish with the scallion greens, parsley, crispy chorizo and a drizzle of olive oil.
