Put the diced pumpkin and spice in a saucepan, just cover with water, and heat until simmering. Cook gently for 10 minutes until the pumpkin is tender. Drain through a sieve and leave to cool a little.
Transfer to a food processor or blender and add the lime juice, 2 tablespoons of the maple syrup and the milk. Blend until completely smooth. Taste for sweetness, adding a little more maple syrup if you like.
Pour into two glasses, add several ice cubes to each, and sprinkle with hot pepper sauce if you like very spicy flavors.
