Rib Eye Bites with Horseradish Mustard Aioli

Whenever Ree makes appetizers for a party, she always includes a steak option. She loves inventing new sauces to serve alongside her steak bites, although the ranch cowboys say that good steak doesn’t require an accompaniment. Whichever side of the fence you are on, these are going to be delicious.

  1. Mix the mayonnaise, horseradish, chives, mustard and pepper in a small bowl until well combined. Set aside.
  2. Heat a large skillet over medium-high heat. Drizzle the steak with the olive oil and sprinkle with the steak seasoning. Add 1 tablespoon butter to the skillet and allow it to melt and brown, 2 to 3 minutes. Add some of the steak bites to the skillet in a single layer. Allow it to cook, undisturbed, until browned slightly, 30 to 45 seconds. Using a spatula, flip as many of the steak bites as you can at one time. Repeat with the remaining bites. Cook just enough time to sear the cubes, an additional 30 to 45 seconds.
  3. Remove to a plate and repeat with the remaining steak and butter. Pour the pan juices over the bites once they are all cooked.
  4. Serve the bites along with the sauce and toothpicks for serving.
