Sour Pineapple Tiki Cocktail

2 cups fresh grapefruit juice

2 tablespoons maraschino cherry juice, plus maraschino cherries, for garnish, optional

1 pineapple (3 1/2 pounds), peeled, cored and cut into large chunks, plus pineapple wedges, for garnish, optional

1 tablespoon li hing powder, optional

24 ounces seltzer 

16 ounces dark rum, optional


  1. Add the grapefruit juice, maraschino cherry juice, pineapple chunks and li hing powder, if using, to a blender. Blend on high until smooth.
  2. Divide the juice among 8 to 10 large glasses and add ice. Divide the seltzer among the glasses. Float with 2 ounces of dark rum if desired. Top with a wedge of pineapple and a maraschino cherry if using.
