The Knuckle Sangwich

  1. For the braised beef: Place the meat in either a Dutch oven or high-sided roasting pan. Make small slits in the meat and stuff with some of the garlic. Rub the remaining garlic all over the meat. Mix the salt and pepper together and sprinkle all over the meat. Tie the rosemary and thyme together with kitchen twine, then place on top of the meat. Cover the meat with the red wine and rub it in with the rest of the marinade. Cover with foil and allow to marinate, refrigerated, overnight.
  2. Add 2 cups water to the roasting pan. Roast or smoke the meat at 200 degrees F until fork-tender, 1 hour 30 minutes. Shred the beef and remove from the braising juices. Strain the juices and reserve for the dip.
  3. For the caramelized mushrooms and onions: Sauté the mushrooms and onions in the olive oil with salt and black pepper until caramelized.
  4. For the truffled herb goat cheese spread: Combine the goat cheese, cream, green onion, rosemary and thyme in a bowl, mixing well to incorporate.
  5. For the knuckle sangwich: Slice the Cuban bread lengthwise to open it up. Smear the goat cheese spread on the bottom of the bread. Fill with roughly 1 cup of braised beef, then top with the mushrooms, onions and provolone. Top with the bacon, then close it with the top of the bread. Brush the top of the bread with butter and press on a sandwich press until the bread is slightly crispy and golden brown. Slice diagonally, corner to corner. Use the leftover braising juices to dip the sandwich in. Repeat to make more sandwiches.
