This Is Not Rice Pilaf

1/4 cup/55 g butter

2 onions, sliced

2 cloves garlic, peeled and crushed

1 tablespoon chopped fresh thyme

Salt and freshly ground black pepper

1 1/2 cups/325 g rice


  1. Heat the butter in a saute pan and gently fry the onions until soft and slightly golden. Add the garlic 1 minute, along with the thyme. Season with salt and pepper and set aside.
  2. While the onions are cooking, bring a large pot of water to the boil. Salt it, as for pasta, then boil the rice until tender. Drain well. Toss with the onion mixture and heat through.
