Directions
For the mascarpone crema: Add egg yolks and 1 1/2 tablespoons of the sugar to the top of a double boiler set over simmering water. Cook, whisking constantly, until the mixture thickens, becomes pale and the sugar dissolves, about 4 minutes. Remove from the heat and set aside to cool slightly.
Beat the mascarpone, heavy cream, remaining 1 tablespoon sugar and vanilla in the bowl of an electric mixer on medium-high speed until fluffy and it holds soft peaks, about 2 minutes. Add the egg mixture and beat another 2 minutes to combine and ensure that the crema is nice and fluffy.
For the affogato: Combine the cocoa powder and espresso powder in a small bowl and set aside.
Divide the gelato between 2 coffee cups, then pour a shot of espresso into each. Top with a dollop of mascarpone crema, shave bittersweet chocolate over the top and dust with the cocoa and espresso mixture.
