  1. For the pastrami roast beef: Preheat the oven to 400 degrees F.
  2. Coarse-grind the smoked salt, coriander, peppercorns, brown sugar, juniper, smoked paprika, brown and yellow mustard seeds and allspice together. Rub all over the beef. Roast for about 1 hour or until desired temperature. We serve it rare! Rest and cool for easier slicing. Thinly slice 6 ounces per sandwich.
  3. For the pickled red onions: Place the onions in a container and set aside.
  4. Combine the vinegar, sugar, sea salt and 1 gallon water in a large pot.
  5. For the spice sack: Add the coriander seeds, peppercorns, cloves and star anise to a spice sack or muslin bag and tie shut. Add to the brine and bring to a boil; boil for 10 to 15 minutes. Pour the hot brine over the red onions. Cover and let cool to room temperature. Refrigerate for future use. Pickled onions will last up to 1 month in the refrigerator.
  6. For the dijonnaise: Mix the mayonnaise, mustard, Dijon mustard, salt and pepper in a bowl. Refrigerate for up to 1 month.
  7. For the sandwich: Grill the rye bread. Drizzle with the dijonnaise. Add the cheese on top. Pile high with the pastrami-spiced roast beef. Top with the pickled red onions. Close the sandwich!
