Three 2 1/2-pound frying chickens, split
4 tablespoons salt
1 cup cider vinegar
3/4 cup peanut oil
1 teaspoon hot sauce, such as Tabasco
1/8 teaspoon black pepper
1 teaspoon cayenne pepper
If you cannot find small chickens, use larger ones (3 to 3 1/2 pounds) and quarter them.
