Truffle Shrooms Pizza

  1. For the starter: In a container, mix by hand the flour, yeast and 1 cup water. Rest on the counter, covered, for 24 hours.
  2. For the dough: In a spiral or stand mixer, mix for 1 minute the starter, flour, yeast and 1/2 cup water. Add the salt. Mix for 10 minutes. Let rest, refrigerated, for 24 hours.
  3. Portion the dough into 8-ounce balls. Refrigerate 48 hours. Remove two a few hours before service.
  4. For the parm blend: Mix the Parmesan and pecorino in a bowl.
  5. For the truffle butter: In a mixer, whip the butter for 10 to 15 minutes. Add the salt, truffles, parsley and 1/2 cup parm blend. Whip. Scoop into portions and chill.
  6. For the shroom: Preheat the oven to 500 degrees F.
  7. Toss the mushrooms with olive oil, salt and pepper. Transfer to a roasting pan and bake for 3 minutes.
  8. For the pickled red onions: In a container, mix the onion, salt and sugar. Let sit for 10 minutes. Add the bay leaf and chile flakes. Mix the vinegar with 1 cup water. Pour over the top of the onions. Pickle, refrigerated, overnight.
  9. To assemble: Preheat the oven to 500 degrees F.
  10. Stretch the dough by hand to 12 inches. Place on a wooden peel. Add 1/4 cup crumbled truffle butter, 1 cup shrooms, 1/4 cup pickled red onions and 1/2 cup mozzarella. Bake for 4 to 5 minutes. Garnish with 2 tablespoons parm blend and drizzle with truffle oil. Repeat to make another pizza.
