7-Vegetable Bolognese Sauce
The usual meat-based Bolognese sauce gets a vegetarian makeover in this healthy pasta dish. We combined a whopping seven different vegetables in the hearty sauce, including mushrooms, butternut squash, carrot, onion, bell pepper, celery and tomato. All the veggies work together to create depth of flavor and a satisfyingly thick sauce, and ground cashews add a perfect bit of meaty texture. We love the Bolognese over al dente rigatoni, a shape perfect for holding this rich sauce, but you can use any pasta of your choosing.
White Bolognese
This white Bolognese feels lighter than a traditional tomato-based Bolognese, and its shorter cooking time makes it perfect for a weeknight dinner. Warm spices such as nutmeg and allspice add a savory depth to my version.
Rigatoni with White Bolognese
This Bolognese-inspired sauce uses no tomato. Instead, we make a ragù of ground turkey cooked with onion, pancetta and rosemary, simmered with chicken broth and finished with a little cream for a heartwarming and rich, but not too heavy, pasta dinner.
