We like to joke about eating dessert for breakfast. Pumpkin pie the day after Thanksgiving? Of course. An annual morning cupcake on your birthday? Justifiable, we say! But really — we all know those days are the exception to rule. Cake just isn't the best choice for the first meal of the day (sob!). But what about coffee cake? It feels like it lives somewhere in the middle of "acceptable breakfast" and "come on, no, that's just cake."

Ellie Kreiger has found a way to put this comforting dish solidly in the first camp, and she's clueing you into her secrets this Sunday in a LIVE class on the Food Network Kitchen app — for free! Her healthy Blueberry Coffee Cake relies on some clever swaps to amp the nutrition. First, she chooses whole-wheat for half of the flour, which adds extra fiber and a subtle nutty flavor. Then, she adds a cup of nonfat plain yogurt to add moisture and tang. And she bulks it up with blueberries! Which add sweetness and all the goodness fruit brings to any recipe.

Wake up early on Sunday February 16, 2020 and cook along with Ellie at 9 a.m. EST. You don't need to be a subscriber to join in the fun, and we hope you bring your most pressing questions for Ellie to answer! About cake or anything else.
