Easy Cheesy Sloppy Joe Sliders

This recipe is quick and delicious, and it makes a fun dinner for the kids or a great game-day nosh to share. The sauce can be made up to 3 days in advance and stored in the fridge; simply reheat when you’re ready to eat. The onion, green pepper and garlic can even be chopped in a food processor to reduce prep time.



  1. Cook the beef in a large skillet over medium heat, stirring occasionally, until browned and cooked through, 5 to 7 minutes.
  2. Carefully drain excess fat from the pan. Add the onion, bell pepper and garlic and cook until fragrant and the veggies soften, about 3 minutes. Season with salt and pepper.  
  3. Stir in the ketchup, hot sauce, vinegar, Worcestershire and brown sugar. Reduce the heat to low and simmer until the veggies are tender and the mixture has thickened, 15 to 20 minutes. If the mixture seems too thick, add 1 to 2 tablespoons water. Add salt and pepper to taste.  
  4. Preheat the broiler. Place the buns cut-side up on a baking sheet and sprinkle both sides with the cheese. Broil until the cheese is bubbly and melted, 1 to 2 minutes. Spoon the sloppy joe mixture on the bottom halves of the buns, close the sandwiches and enjoy immediately.

Cook’s Note

The sloppy joe filling can be made several days in advance and stored in an airtight container for up to 4 days. If you don’t have a broiler, toast the buns in a toaster and then sprinkle the bottoms with cheese just before spooning on the meat.
