2 large cucumbers (not English cucumbers)

4 large curly kale leaves with stems

2 medium stalks celery

1 cup loosely packed cilantro with stems

1 large jalapeno, seeded and stemmed

One 2-inch knob ginger, peeled

2 limes, juiced

1/4 teaspoon kosher salt

Hot sauce 


Special equipment:
a juicer
  1. Juice the cucumbers, kale, celery, cilantro, jalapeno and ginger in a juicer according to the manufacturer's directions. 
  2. Pour the juice into a small pitcher and stir in the lime juice, salt and a few dashes of hot sauce to taste. Divide between 2 large glasses filled with ice and serve.

Cook’s Note

Alternate adding the soft leafy vegetables and hard vegetables to help them pass through the juicer more easily. I also like to use this juice as the base for my Green Bloody Mary cocktail: Add 1 jigger of vodka per serving (1 1/2 ounces) and garnish the glasses with celery stalks, olives and pepperoncini.
