1/2 pound (2-slabs) Halloumi cheese

2 tablespoons extra-virgin olive oil

Cheese Marinade, recipe follows

Cheese Marinade:

1 shallot finely diced

1 tablespoon minced garlic

1 lemon, juiced

2 tablespoons extra-virgin olive oil

1 teaspoon freshly cracked black pepper

1 tablespoon freshly chopped parsley leaves


  1. Preheat grill to high heat.
  2. Brush cheese with 2 tablespoons oil. Grill on each side for 2 to 3 minutes until well marked. Remove from the grill. Pour marinade over the cheese and toss. Slice cheese into 1/2-inch pieces and serve.

Cheese Marinade:

  1. In a bowl, stir all the ingredients together.
