Beef and Lentil Tacos

We have “taco Tuesday” every week, and this is my go-to recipe. The lentils are totally hidden from my detective-daughter, Iris. Adding lentils is a great way to introduce different flavors, add nutrients and stretch the beef to make more for less of a cost.

  1. For the secret ingredient guacamole: In the bowl of a food processor fitted with the blade attachment, add the baby peas and pulse until chopped. Add the avocados and pulse again until slightly chunky in consistency. Remove to a bowl and stir in the garlic and lime juice, then season with salt and pepper.
  2. For the tacos: In a large skillet, brown the ground beef over medium-high heat, using a wooden spoon to break it up, 5 to 8 minutes. (Optional: Drain the beef on a paper towel lined plate and then return to the skillet.)
  3. Add the chili powder, salt, cumin, garlic powder, onion powder and tomato paste. Cook 1 to 2 minutes, stirring continuously. Add the lentils and stir. Add 1/2 cup water, then bring to a simmer; reduce the heat to low. Let cook about 10 minutes. (If it starts to look dry, add more water.)
  4. Serve on soft flour tortillas or crispy corn tortilla shells with desired toppings. We like my secret ingredient guacamole, cheese, sour cream, chopped tomatoes, chopped lettuce, cilantro, scallions, salsa and hot sauce.

Cook’s Note

Blanch the peas by cooking in boiling salted water for 1 minute, then transfer to ice water until cold. Drain well.
