Directions
Preheat the oven to 350 degrees F. Grease a 9-inch square pan and line it with enough parchment paper to allow for 1-inch wings on opposite sides.
Spread the oats on a rimmed sheet pan and toast until fragrant and slightly darkened; begin checking for doneness at 10 minutes. Transfer to a large bowl and add the dried fruit, nuts and seeds.
In a medium saucepan, combine the sugar, the honey or maple syrup, the butter or coconut oil, and the salt and set over medium heat, whisking to combine. Once it bubbles, stop whisking and allow it to bubble for about 3 minutes (reducing the heat if it becomes too spitty), until its color darkens slightly. Remove from the heat and whisk in the tahini or nut butter and the vanilla. Add to the oat mixture and use a rubber spatula to fold together. Scrape into the prepared pan and press it down very firmly and evenly. (It’s most efficient to place another piece of parchment over the mixture and press with your hands. If it’s too hot for your hands, let it cool for a minute or two.) Refrigerate until just firm, 20 to 30 minutes, then transfer to a cutting board and cut into 12 bars.
Store in an airtight container at room temperature for up to a week or for a little longer in the fridge.
