Cilantro-Cucumber Tzatzki Sauce for Red Hot Chile-Rubbed Pork Skewers

Ingredients

1 cup plain yogurt, preferably whole-milk

1/4 cup finely diced, seeded cucumber

1 tablespoon minced fresh cilantro

1 tablespoon freshly squeezed lime juice

1 teaspoon minced garlic

1/2 teaspoon kosher salt

1/8 teaspoon ground white pepper

Directions

  1. To make the sauce, whisk all the ingredients together in a small bowl. Cover and refrigerate until needed.
