Cook the fries according to the instructions on the package.
In a medium cast-iron skillet over medium-high heat, heat the half-and-half until hot. Add the cheese and heat, stirring, until completely melted. Add the cooked fries and toss to coat.
Arrange the lettuce, bacon, hard-boiled eggs, chicken, avocado, tomatoes and blue cheese in rows on top of the fries to resemble a Cobb salad.
