Cucumber Curls in Butter and Mint

4 to 6 kirby cucumbers or a seedless cucumber, peeled

2 tablespoons butter

Salt and freshly ground black pepper

1 to 2 tablespoons chopped mint


  1. Run a good vegetable peeler down the sides of the cucumber, lengthwise to create long thin `strips; keep on turning the cucumber; you'll be left with an inner core which is basically seeds and which you should discard.
  2. Heat the cucumber curls in the melted butter for 30 seconds to a minute. Remove from heat. Season with salt and pepper; dust with mint.
