Directions
Combine 4 pounds chopped peeled apples, 2 cups apple cider, 1 cup brown sugar and 1/2 teaspoon salt in a Dutch oven over medium heat. Bring to a simmer, partially cover and cook until the apples are soft, 20 minutes. Remove from the heat and stir in 1 tablespoon lemon juice, 1 teaspoon each cinnamon and vanilla and a pinch of cloves. Puree using an immersion blender. Transfer the pot to the oven and bake at 250 degrees F, uncovered and stirring every 30 minutes, until thick and dark, 2 1/2 to 3 1/2 hours. Let cool.
