This is one of those recipes that feels impressive but is surprisingly low-effort. The fish bakes on top of a bed of potatoes, fennel and shallots, which gets crisp around the edges while staying tender underneath. Lemon slices and a bit of butter melt into the halibut, keeping it moist and flavorful. The gremolata—loaded with briny Castelvetrano olives, lemon zest and fresh parsley—brings it all together with a punch of flavor.

Directions
Place a baking sheet on the bottom oven rack and preheat to 500 degrees F. Toss together the potatoes, fennel, shallot and crushed garlic in a large bowl with 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper. Spread the potato mixture evenly on the hot baking sheet. Reduce the oven temperature to 450 degrees F and bake until the potatoes are tender and beginning to brown in spots, about 15 minutes.
Slice 1 lemon into 8 to 12 thin rounds. Season the fish with salt and pepper, and arrange on top of the vegetables, evenly spaced out. Pour 1 tablespoon wine over each piece of fish, then top each with 2 or 3 lemon slices and a cube of butter. Bake until the fish is just cooked through and the lemon is starting to brown, 12 to 15 minutes.
Meanwhile, make the olive gremolata: Grate the zest of the remaining lemon into a small bowl and squeeze in 1 tablespoon lemon juice. Add the grated garlic, olives, parsley and remaining 2 tablespoons olive oil. Stir together and season with salt.
Divide the fish, vegetables and pan drippings among plates. Top with the olive gremolata.
