Broccoli-Cheddar Dash Mini Waffles

These delightful mini waffles are perfect for little hands and bound to charm even picky eaters. Made with simple ingredients and packed with cheesy goodness, they're fun and easy to chew thanks to the Dash Mini Waffle Maker. They can be eaten out of hand, ideal for a quick meal or snack for your toddler — or yourself! They’re easy to pack up for taking on the go, plus they're nicely freezer-friendly if you’re lucky enough to have leftovers.

  1. Place the broccoli florets in a food processor and pulse until finely chopped (pieces should be about the size of rice grains). Place the broccoli in a medium bowl and add the flour, milk, Cheddar, salt and black pepper. Mix until just combined; do not overmix. Let the batter rest while you preheat a Dash mini waffle maker according to the manufacturer’s instructions.
  2. Spray the plates of the waffle maker with cooking spray. Pour a scant 1/4 cup of batter into the waffle maker, cover and cook until the waffle is browned and set, 3 to 5 minutes. Serve immediately, or transfer to a cooling rack set over a tray. Repeat with the remaining batter.
  3. You can serve the waffles warm or room temperature. They can also be prepared ahead and refrigerated for up to 4 days or kept in an airtight container. You can also freeze leftovers for up to 4 months. Reheat waffles in a 300-degree-F oven until heated through, 4 to 6 minutes for refrigerated, 7 to 10 minutes for frozen.

Cook’s Note

When measuring flour, we spoon it into a dry measuring cup and level off excess. (Scooping directly from the bag compacts the flour, resulting in dry baked goods.)
