Avocado-Chocolate Dash Mini Waffles

These waffles are a fantastic way to sneak in some healthy fats, fiber and a touch of veggies, while their mini size (we used a Dash mini waffle maker) is perfect for eating out of hand. Avocado and coconut oil keep them incredibly moist, while cocoa powder and mini chips add chocolately goodness.

a mini waffle maker, such as a Dash Mini Waffle Maker
  1. Preheat a mini waffle maker according to the manufacturer’s instructions.
  2. Process the coconut milk, maple syrup, coconut oil and avocado flesh in a blender on high until smooth. Transfer to a large bowl. Whisk together the flour, cocoa powder, baking powder and salt in a small bowl until combined. Mix the egg into the avocado mixture, then fold in the dry ingredients and chocolate chips if using.
  3. Spray the plates of the waffle maker with cooking spray. Pour 1/4 cup of the batter into the waffle maker, close and cook until the waffle is dark brown and set, 4 to 5 minutes. Serve immediately or transfer to a cooling rack set over a tray. Repeat with the remaining batter.
