Cacio e pepe, the classic Roman pasta dish, is the flavor inspiration for this simple but delicious cauliflower recipe. While boiled cauliflower is usually looked upon as bland and boring, it’s the perfect canvas for a showering of sharp grated cheese, black pepper and butter.

Directions

  1. Cut 1 head cauliflower into large florets. Cook in salted boiling water until tender, 8 to 10 minutes. Drain, pat dry and transfer to a plate. Sprinkle with 2 tablespoons each grated Parmesan and pecorino. Melt 3 tablespoons butter with 1 smashed garlic clove in a small skillet over medium heat; discard the garlic and add 3/4 teaspoon coarsely ground pepper. Spoon over the cauliflower.
